How much volume will I actually lose?

Should I raise everything at once?
No. Raise a handful of high-volume, low-margin items — plowhorses — and leave your signature items and known price anchors alone. Guests notice the price of the thing they always order.
When's the right time?
With a menu change, a seasonal rotation, or a genuine cost event you can point to. A price change alongside something new is read as a new menu; a price change alone is read as a price change.
