Muffin cost calculation: batch inputs per saleable item
Bakery purchases arrive in bags, blocks and dozens, while the saleable unit is one muffin. A fraction of an egg is a share of the batch, not an instruction to measure eggs by eye.
Edit this sampleThe sample calculation
All quantities, USD prices and yields below are illustrative. They are not current quotes, customer data or a benchmark for your business. Prepared ingredient subtotals are assumed inputs; replace them with your own costed sub-recipes.
| Ingredient | Sample purchase | Per serving | Usable yield | Line cost |
|---|---|---|---|---|
| Flour | $22.00 / 25 lb | 1.8 oz | 100% | $0.10 |
| Butter | $4.50 / 1 lb | 0.7 oz | 100% | $0.20 |
| Egg | $4.80 / 1 dozen | 0.25 each | 100% | $0.10 |
| Sugar, milk and flavoring allowance | $0.35 / 1 each | 1 each | 100% | $0.35 |
- Sample ingredient cost
- $0.75
- Assumed menu price
- $4.00
- Sample food cost
- 18.6%
Line cost = pack price ÷ pack quantity × compatible serving quantity ÷ usable yield fraction. Calculations keep full precision before display rounding. Ingredient gross margin excludes labor, rent, taxes and other overhead; the assumed selling price is not a recommendation.
The detail that changes this calculation
The sample assigns one-quarter of an egg to each muffin. In a 12-muffin batch that is three eggs. Multiply every per-item amount by the planned batch size, then divide the measured batch cost by the number of saleable muffins. Fewer saleable items increase cost per item.
Replace the sample with your evidence
- Use the actual batch recipe and count saleable output after baking; do not assume every piece produced will be sold.
- The sugar, milk and flavoring line is an illustrative prepared subtotal. Replace it with your own costed batch subtotal or separate ingredient lines.
- Add liners, packaging and garnishes used for your serving. Do not treat the sample as a complete specification for your bakery.
A useful comparison to try
If a batch planned for 12 produces only 11 saleable muffins, divide the same batch ingredient cost by 11. Record discard separately so a portion change is not confused with a purchase-price change.
