Cheese pizza cost calculation: dough, cheese, sauce and box

A whole pizza combines a prepared dough ball with ingredients bought by weight and packaging bought by count. Costing cheese by the case alone hides the effect of portion size.

The sample calculation

All quantities, USD prices and yields below are illustrative. They are not current quotes, customer data or a benchmark for your business. Prepared ingredient subtotals are assumed inputs; replace them with your own costed sub-recipes.

Line cost = pack price ÷ pack quantity × compatible serving quantity ÷ usable yield fraction. Calculations keep full precision before display rounding. Ingredient gross margin excludes labor, rent, taxes and other overhead; the assumed selling price is not a recommendation.

The detail that changes this calculation

The mozzarella example starts with a $72, 20 lb case and a 7 oz portion. That is $3.60 per purchased pound and $1.575 of cheese per pizza at the stated 100% usable yield. An extra ounce adds $0.225 before any other change. These are sample inputs, not a supplier quote.

Replace the sample with your evidence

  • Replace the dough-ball figure with the cost of your own dough batch divided by usable dough balls, or with the purchased unit price.
  • Weigh the cheese portion and confirm whether your recipe quantity is purchased cheese or finished usable cheese. Apply loss once.
  • The oil, seasoning and box line is an illustrative subtotal. Itemize these when your invoice and portion records are available.

A useful comparison to try

Try 6 oz and 8 oz of mozzarella while holding the other lines fixed. Judge the food and portion with your team; a lower calculated ingredient cost does not establish customer acceptance.
